Dr Jose Manuel Cruz Rubio

whose work is related to the structure-function relationship between polysaccharides and the gut microbiota. For the first, he applies and has developed methods for the quantification and characterization of plant-sourced polysaccharides such as fructan from Agave and the complex hemicelluloses that form mucilage in plants. Once the structure and properties are sufficiently well defined, the polysaccharides are evaluated for their capacity to be fermented by members of the gut microbiota. He is currently a postdoctoral research fellow in the Maghuly research group at the University of Natural Resources and Life Sciences, Vienna (BOKU).

His third lecture will cover the following topic:
